Instructions
- 1.In a large bowl, combine ground beef or lamb, chopped onion, minced garlic, parsley, cumin, salt, black pepper, breadcrumbs, and egg. Mix until well combined.
- 2.Shape the mixture into small meatballs, about 1 inch in diameter.
- 3.Preheat the air fryer to 400°F (200°C).
- 4.Place the meatballs in the air fryer basket in a single layer, making sure they are not touching.
- 5.Air fry the meatballs for 12-15 minutes, or until they are cooked through and golden brown, shaking the basket halfway through cooking.
- 6.While the meatballs are cooking, prepare the lentil soup. In a large pot, heat a splash of oil over medium heat.
- 7.Add diced carrot and cook for 3-4 minutes until softened. Stir in chopped spinach and cook for another 2 minutes.
- 8.Add diced tomato, vegetable broth, bay leaf, and paprika. Bring to a boil, then reduce heat and simmer for 15-20 minutes until lentils are tender.
- 9.Remove the bay leaf and season the soup with salt and pepper to taste.
- 10.Serve the meatballs hot alongside the lentil soup, garnished with extra parsley if desired.
