Instructions
- 1.In a large bowl, combine the diced eggplant, corn, bell pepper, red onion, and garlic.
- 2.Drizzle the olive oil over the veggies and sprinkle with paprika, salt, and black pepper. Toss everything together until well coated.
- 3.Preheat your air fryer to 400°F (200°C).
- 4.Once preheated, place the marinated veggies in the air fryer basket in a single layer. You may need to do this in batches depending on the size of your air fryer.
