Ingredients

  • 🍆Eggplant(1 medium, diced)
  • 🥒Cucumber(1 medium, sliced)
  • 🍅Tomato(1 large, diced)
  • 🧅Red onion(1 medium, sliced)
  • 🌶️Bell pepper(1 medium, sliced)
  • 🧄Garlic(3 cloves, minced)
  • 🌿Fresh parsley(1/4 cup, chopped)
  • 🧂Olive oil(2 tablespoons)
  • 🌶️Paprika(1 teaspoon)
  • 🧂Salt(to taste)
  • 🌶️Black pepper(to taste)
  • 🍞Pita bread(4 pieces)
  • 🥗Yogurt sauce(for serving)

Instructions

  1. 1.In a large bowl, combine the diced eggplant, corn, bell pepper, red onion, and garlic.
  2. 2.Drizzle the olive oil over the veggies and sprinkle with paprika, salt, and black pepper. Toss everything together until well coated.
  3. 3.Preheat your air fryer to 400°F (200°C).
  4. 4.Once preheated, place the marinated veggies in the air fryer basket in a single layer. You may need to do this in batches depending on the size of your air fryer.
