- 🍚Jasmine Rice(1 cup)

Instructions
- 1.Preheat your air fryer to 400°F (200°C).
- 2.In a mixing bowl, combine the red curry paste and coconut milk, stirring until well blended.
- 3.Cut the chicken breast (or tofu) into bite-sized pieces and add them to the curry mixture, ensuring they are well coated.
- 4.Add the broccoli florets and sliced carrots to the bowl, mixing everything together.
- 5.Transfer the mixture to the air fryer basket, spreading it out evenly.
- 6.Air fry for 15 minutes, shaking the basket halfway through to ensure even cooking.
- 7.While the curry is cooking, prepare the jasmine rice according to package instructions.
- 8.Once the cooking time is up, check that the chicken is cooked through (internal temperature should reach 165°F or 75°C). If needed, air fry for an additional 2-3 minutes.
- 9.Serve the curry over a bed of jasmine rice, garnished with fresh basil and lime wedges.
