Ingredients

  • 🌽Corn kernels(1 cup)
  • 🥕Diced carrots(1/2 cup)
  • 🌶️Bell pepper (any color)(1, diced)
  • 🧅Red onion(1/2, diced)
  • 🧄Garlic cloves(2, minced)
  • 🌿Cilantro(1/4 cup, chopped)
  • 🌮Taco shells(8)
  • 🧂Olive oil(2 tablespoons)
  • 🌶️Taco seasoning(2 teaspoons)
  • 🧀Shredded cheese (optional)(1 cup)

Instructions

  1. 1.Preheat your air fryer to 400°F (200°C).
  2. 2.In a large bowl, combine corn, diced carrots, bell pepper, red onion, minced garlic, and cilantro.
  3. 3.Drizzle olive oil over the veggie mixture and sprinkle with taco seasoning. Toss until everything is well coated.
  4. 4.Place the seasoned veggies in the air fryer basket in a single layer. You may need to do this in batches depending on the size of your air fryer.
  5. 5.Air fry the veggies for 10 minutes, shaking the basket halfway through to ensure even cooking.
